As for the Tofurkey, I think I'll pass, though now I've got a good question I can ask my vegetarian friend upon returning to school...

Same reason they make soy "hamburgers", soy "sausage", soy "chicken nuggets", etc. I'm guessing straight tofu gets boring after a while even to people who can stand to eat it, and there aren't a huge number of other options for vegetarians to get their complete proteins. Less so for vegans. Plus if you happen to be a former non-vegetarian, chances are you'll eventually get homesick for your old favorites.If you aren't going to eat a real Turkey why even bother with a tofu one? You might as well go all out or just substitute a different dish.
If the science of artificial flavoring is advanced enough to make convincing meat-flavored soy products, there will be a demand for them.
