For me, the perfect hot dog is fried, in a toasted bun, with celery salt and TONS of mustard, and nothing else. Also it should not be a "natural casing" hot dog (I dislike the "snap" that most people seem to love). If it has other stuff, I may still enjoy it but it no longer goes in the "hot dog" box in my brain (it may be a chili dog or a kraut dog or whatever).

here in carolina we eat our hot dogs with chili, mustard and slaw (and onions too but that depends on if they offer them).
Not quite. A real texas weiner has finely diced onions and spicy brown (not yellow) mustard, with a sauce that is almost but not quite unlike chili... Not sure where the article got the hot sauce thing from... And to be honest I've only seen or heard of them being served in the Northeast of the state. I've just assumed its a state wide thing, but apparently its not. Also, the spices used in the sauce aren't southwestern at all. They are generally warm spices such as allspice are used. Also as a general rule the HOT DOGS ARE FRIED!
that's all fine and dandy, but the one thing missing is still cole slaw. it's really a make-or-break deal.

I never understood why people like cole slaw so much. For me it's like toast; it's just there.

Depends on the slaw. Some can be really good and standout, some is just plain. Not crap, but not notable either. Really good salade de chou though is awesome.

I can see that, but to me a hot dog has to have sausage, which wasn't to my taste even when I DID eat meat.

Only once did I have cole slaw which was any good: at a KFC in Québec. The stuff was, like, neon green.

I know this didn't refer to me, but just so you know I DO like slaw on my pulled pulled pork. Out of curiosity do you prefer ketchup or vinegar based sauces? I'm a big fan of vinegar my self.
