I had to look it up on wikipedia... It doesn't seem that bad really, cheese curds are rather bland, and I would rather have them than mayonaisse on my fries. I actually like gravy on fries as well. I'm from Jersey, so Texas weiner places serve this kind of thing, except the sauce has meat in it as well. I've seen some places melt cheese on them. And I would never think of getting my fries without the gravy-like sauce when provided. It is a godly creation from the city I was born in. What sucks is I happen to live in the one county where there are NO PLACES TO GET THE DAMN THING! So I always make to go to a place called the Hot Grill, everytime I go to Clifton to visit relatives.

here in carolina we eat our hot dogs with chili, mustard and slaw (and onions too but that depends on if they offer them).

I remember years ago seeing a TV show where passersby on a public sidewalk were invited to sample from very smelly cheese. Most people refused, but the ones who actually ate it didn't dislike the taste.

Not quite. A real texas weiner has finely diced onions and spicy brown (not yellow) mustard, with a sauce that is almost but not quite unlike chili... Not sure where the article got the hot sauce thing from... And to be honest I've only seen or heard of them being served in the Northeast of the state. I've just assumed its a state wide thing, but apparently its not. Also, the spices used in the sauce aren't southwestern at all. They are generally warm spices such as allspice are used.
