I'm sure D.C. Simpson never intended for the race-species connection to be as direct and thorough as it is in, say, the Naylorverse. Dragons just happened to be an oppressed people during an unspecified part of American history. (And if your kind had a history of roasting and eating knights, maybe you would be too.) I'm sure it doesn't go any farther than that.
