I've seen stories with evil kings, queens, and princes, but the only evil princess I can remember was in Mirrormask, and she wasn't as bad as her mom. Millie ought to play a princess just to tip the scales.
Besides, when you're a short, fat plumber with a mustache that hasn't been fashionable in generations, you can't count on princesses falling in love with you.
The most likely alternative was Bowser's reign of terror. Which might appeal to you, but certainly not to everybody.I don't see why Mario didn't just give up. I'm sure there are other perfectly good princesses. Plus, here he's supporting an archaic monarchy.
