I think you're a bit mixed up. No one fabricated Saint Nicholas, he is the quite real basis for Santa.
Santa being an anagram of Satan is quite meaningless, since "santa" is derived from "sanctus" (saint). Santa Claus is the modern legend of Saint Nicholas, that's all.
Please stop seeing connections where there are none.

Interestingly enough, Pumpernickel bread means "the devil's fart". Pumper being ancient German for "lol u farted" and Nickel, as stated above, being the devil.
