Actually, Dr. Doog, the opposite of -phobic would be -philic. Hydrophilic substances are those that bond strongly with water, and hydrophobic substances would repel water. Scientists have produced a substance that had the qualities of both, causing it to adhere to droplets as well as repel it, distributing itself over the surface to make the ultimate oxymoron, dry water. The droplets act as liquid ball-bearings with possible applications in engineering. Umm.. I read about this in Discover magazine, I guess about a year ago or something.. Anyone here know enough about it to correct any errors in my above statements?

The heads of lipids are hydrophilic while the tails of lipids are hydrophobic. In the lipid bi-layer, the top layer of lipids have their heads facing outwards towards water and the tails facing inwards away from water. The bottom layer does the same, therefore creating the membrane of the cell. There's an example.
